Smoked Salmon and Rice Cucumber Rounds

This dish is easy to make and can be made in just a few minutes.

It is also very light and can work as a cold starter or as a canapé with cocktails.

What you will need:

  • Cooked Rise (cold) – amount depends on how many cucumber rounds you need to make
  • 1 Red Pepper – Finely Chopped
  • ¼ cup Fresh Parsley – Finely Chopped
  • Cucumber Ribbons
  • Smoked Salmon
  • Lemon Juice
  • Caster Sugar
  • Basil Pesto


What to do:

Mix the Chopped Parsley and Chopped Red Pepper with the cooked rice.

Mix the Lemon Juice (about 1 – 2 tablespoons) with ½ -1 Tablespoon Caster Sugar and stir till sugar has dissolved.

Chop some of the Smoked Salmon into very small pieces and mix into the rice mixture.

Use a vegy peeler and a whole cucumber to make the cucumber ribbons.

Fold a ribbon around 2 of your fingers to create the “Cucumber Round”.

Place on a plate and fill with the rice mixture, about 1- 1 ½ tablespoons per round.

Drizzle with the Lemon juice and Sugar syrup and top it off with a piece of smoked salmon and little bit of the basil pesto.
