Biltong Salad

Biltong Salad... Quick, easy and works well with Beef Biltong as well as Venison Biltong

What you need:

  • 1 Whole Cucumber
  • Mixed Lettuce Leaves
  • Feta Cheese
  • Olives
  • 1 Carrot
  • A few thinly sliced biltong pieces (beef or venison)
  • Cherry Tomatoes, Cut in half
  • Good Quality Balsamic Vinegar
  • Castor Sugar

Method:

Take a Vegetable peeler and use it to peel long slices from the cucumber (you’ll need about 6 slices).

Use 2 slices per salad and form into a round shape of desired size. – makes 3 small salads

The Cucumber rounds should be able to stand on its own, if not just keep adding cucumber slices till it is sturdy enough.

Place the 3 Cucumber rounds on the plate that it will be served on and fill each round with a generous amount of mixed lettuce leaves and start building your salad from there by adding all the ingredients as you please and finishing off with the biltong.

Slice the carrot the same way as the cucumber, fold the slices in half and stick them into the salad to add a different dimension.

Pour Balsamic Vinegar into a small sauce pan and add the castor sugar. Simmer and reduce until a syrup-like consistency. Leave to cool for a few seconds then drizzle the vinegar reduction over the salad and the plate.
